Hida beef is one of the absolute best premium Japanese wagyu meat. The first time I tried it, it was in the exceptional Aji-no-Yohei in Takayama. It completely blew my mind. The meat melts in your mouth, full of umami with a soft and exquisite taste.

🍶 Aji-no-Yohei is part of the Funasaka Brewery, one of the best sake breweries in Takayama. You can pair your meal with an excellent tasting set of sake, making the experience superb. I could dine there everyday.
